First Meal - Pasta, Veg's, and Salad

One my first meals when I switched to the WFPB diet. A simple Barilla Protein+ Penne Pasta boiled and added to a saute pan of fresh zucchini, summer squash and butternut squash. I add garlic powder and a touch of salt for taste. Now, in the beginning, you may want to use a little oil to saute, and for a 'sauce' of sorts, but you will end up dropping all oils, I hope. I use Lo or No sodium Vegetable Broth, and I wonderful ingredient called Nutritional Yeast. It gives a fullness to the broth, and can even be used as a full gravy as you will see in other posts. For this bowl, it was 1 cup broth to about two tablespoons of nutritional yeast. I simply paired it with a salad. Again, in the beginning, you might have to go with a little oil, or buy a dairy free dressing from the store to your liking, but eventually we will get into dressings that are WFPB and healthy for you. Let's not go Too Much Too Soon. First meal.
