Saturday Night Fried Chicken Salad

Hearty and wholesome for your easy-night.

So, the goal is always to eat a WFPB meal with only fresh, prepared ingredients, but we all deserve an easy-night off. A simple salad of your choices, loaded with everything you can find. I use greens, tomatoes, cuckes, scallions, black olives, cranberries, almonds or pecans, blueberries...whatever you have on hand. I then air fry for 12 minutes, some Gardein Ultimate Chicken Tenders. Slice them up and garnish with a dressing of your choice. I use Hidden Valley Plant-Based Ranch. Delicious.

A couple things to point out... This salad is like going out, or cheating in a way. It uses vegan chicken that was processed from Soy, but is still fairly healthy. Also, the dressing is commercial. It is processed, delicious by design, but contains a bit more fat than if you made it at home. Not ideal for daily use, but remember, this is a easy-night off meal. Also, Gardein Ultimate has several chicken products. Pay attention, as the nuggets are only good as nuggets, fillets are good in a sandwich but not on a salad or by them selves. The Tenders, as pictured here, are great for salads, or dipping into your favorite dip. I like Sweet Baby Ray's and Ranch dressing, a dip into one, and then into the other. You can also toss them in a bowl, say the Sweet Baby Ray's, put them back in the air fryer to bake it in a bit, and then have boneless wings, the easy way. Enjoy!
