Scallop Scampi

King Trumpet Mushrooms resemble scallops in so many ways. You can cut the stems of the mushroom, sear in a pan with a little vegan butter, garlic, and finish with lemon juice. Pair with angel hair pasta, a little more vegan butter for texture, and garlic and lemon to taste.
